Quinta das Carvalhas Reserva represents the most classic and original style of the estate, bringing together the different expressions of a terroir rich in diversity, with parcels located in both the northern and southern quadrants. This wine was created with the ambition of portraying the Quinta through its history and tradition within the Douro DOC, under the guidance of Pedro Silva Reis and his Fine Wine Division.
While we constantly seek to innovate and discover new varieties and approaches, it is through the classic Douro style that we celebrate our identity and respect the terroir. The old vineyards in the northern quadrant of the estate provide the structure, complexity and depth of this wine, while the south-facing parcels bring a rounder and more seductive character.
The grapes are hand-harvested and transported to the winery in 20 kg boxes. After careful manual selection, the bunches from the old-vine parcels are destemmed and placed in granite lagares, where fermentation takes place through traditional foot treading. The Touriga Nacional bunches are destemmed and the grapes lightly crushed before being transferred to fermentation tanks.
Alcoholic fermentation takes place under controlled temperatures between 24 and 26°C. The wine is then aged in French oak barrels, 20% new and 80% used, for 12 months before bottling.
